Shrimp & Broccoli Stir fry

This recipe fits into the Autoimmune Paleo (AIP) Protocol under reintroduction stage 2 if you are using sesame seeds or sesame oil as your garnish. To make this fit into reintroduction stage 1 garnish with some green onions

Equipment:

  • Measuring cups & spoons

  • Mixing bowl

  • Cutting board

  • Knife

  • Whisk

  • Wok or large skillet

  • Steamer pot with lid

  • Paper towel

Ingredients:

1 lb. Shrimp, peeled & deveined

14 oz Broccoli Florets

1 small Onion, chopped

1-2 tsp Tapioca Starch

Salt, to taste

Cooking oil or Tallow

Sauce:

¼ cup Chicken Stock or Broth

1 TBSP Coconut Aminos

1.5 tsp Tapioca Starch

Minced Garlic, to taste

Fermented Honey with Ginger & Turmeric, to taste, optional

1 tsp Coconut Sugar, optional

Garnish:

Green Onions

Toasted Sesame Oil

Sesame Seeds

Instructions:

  1. Prepare the sauce. Combine all sauce ingredients into a measuring cup, mix until well combined & set to the side

  2. In a large mixing bowl add the shrimp. Dry the shrimp with some paper towel. Sprinkle with salt & tapioca starch. Mix well, you want to make sure that the shrimp is coated in the starch

  3. Steam your broccoli for a few minutes to partially cook it. You could always use the microwave if you don’t have a steamer pot

  4. In a large skillet or wok, heat your cooking oil

  5. Add the shrimp & cook until pink on each side & starting to brown

  6. Remove the shrimp from the pan & place it to the side

  7. Add some more cooling oil & add in your onion cooking until translucent

  8. Add the broccoli to the pan & cook until fork tender

  9. Pour the sauce over top & mix until well combined

  10. Garnish with green onions, sesame seeds or sesame oil
