Crockpot Greek Ribs & Lemon Roasted Sweet Potatoes

In this recipe I will be sharing a different method on marinating the meat using fermentation. I was first introduced to this method when I was following the GAPS protocol. I can fully admit I was a bit nervous the first time I tried it but I’ve been very impressed with the results

Possible benefits from fermenting meat:

  • Increased nutritional content with an enhanced concentration of vitamins & minerals

  • Meat becomes more digestible to the body as the beneficial bacteria start to break down the meat

  • Helps to promote a healthy gut microbiome

If you’re not comfortable fermenting your meat you can skip it & create a still delicious non-fermented meal

All you need to do to ferment meat is to add a few tablespoons of brine from fermented vegetables (sauerkraut in this case), whey or plain unflavored kombucha

Equipment:

  • Crockpot

  • Oven

  • Measuring cups & spoons

  • Spatula

  • Slotted Spoon

  • Parchment Paper

  • Baking Sheet

  • Shallow Roasting Pan

Crockpot Greek Ribs

Ingredients:

2 lbs. Pork Ribs

¼ cup Olive OR Avocado Oil

1/3 cup Lemon Juice

2 TBSP Greek Seasoning Blend

1 TBSP Dried Dill

4 Clove Garlic, minced

1 TBPS Raw Honey OR Maple Syrup

Salt, to taste

Pepper, to taste

2 TBSP Brine from Fermented Vegetables, Whey or Unflavored Kombucha

Instructions:

  1. Cut your ribs into preferred serving size & place them in your crockpot base. I like to marinate my ribs directly in the crockpot but you could always place them n a bowl instead

  2. In a small mixing bowl prepare the sauce by combining the oil, juice, seasonings, garlic, honey & brine (if using). Mix well & pour over top of your ribs mixing well to thoroughly coat the ribs

  3. If you are fermenting them: allow the ribs to sit on the counter for a few hours

    If you are not fermenting them: place the ribs in the fridge & marinate for up to 24 hours

  4. Cook the ribs on low for 6-8 hours

  5. Remove the ribs using a slotted spoon & place them on a large baking sheet lined with parchment. Broil the ribs for 3-5 minutes a side. Keep an eye on them so they don’t burn. Flip the ribs & broil again for 3-5 minutes

  6. Place the now broiled ribs back into the crockpot on keep warm while you prepare the rest of supper or until you are ready to serve them

Lemon Roasted Sweet Potatoes

Ingredients:

1 large Sweet Potato, I like to use the white fleshed variety but any will work

1/3 cup Lemon Juice

1/3 cup Chicken Broth or Stock

¼ cup Olive or Avocado Oil

1 tsp Salt

Pepper, to taste

½ tsp Dried Minced Garlic or garlic powder

2 tsp Oregano

Parsley, to garnish

Instructions:

  1. Preheat your oven to 425F

  2. Cut your potato into bite sized pieces & place them in a shallow baking dish

  3. In a small bowl prepare the sauce by combining the broth, juice, oil & seasoning mixing well to combine

  4. Pour your sauce over the potatoes mixing well to thoroughly coat the potatoes

  5. Bake for 30 minutes

  6. Remove the potatoes from the oven & give them a good mixing

  7. Place the back in the oven & bake for 10-15 minutes or until the potatoes are fork tender

  8. Garnish with parsley
