Potato Salad

The type of potato you use for this salad will depend on if you are following the Autoimmune Paleo (AIP) Protocol. If you are on AIP you will need to use sweet potato, my favorite are the Japanese sweet potato which has purple skin & white flesh, or the Japanese purple sweet potato, using makes for a pretty salad. If you are not following AIP any variety of potato should work

When made as written this falls into reintroduction stage 2, you can omit the eggs to make it stage 1 compliant

Ingredients:

Potatoes

Green onion, diced, reserve some for the top

Celery, diced

Bacon or Ham, diced

Hard boiled eggs, diced

½ cup Mayo

1 TBSP White Balsamic Vinegar, see notes

1 TBSP prepared Yellow Mustard

2 tsp Honey, see notes

pinch of Salt

Paprika, see notes

Instructions:

1) If you are using sweet potatoes be sure to peel them first. Dice your potatoes into bite sized pieces.

2) Place the potatoes in a pot & boil them until they are fork tender. Once they are cooked drain them & allow them to cool in the fridge in a mixing bowl. If you are using hard boiled eggs make them at the same time by placing large eggs in a pot of boiling water & boil for 10-12 minutes. Then place them in an ice bath & allow them to cool in the fridge

3) Prepare your dressing while the potatoes & eggs are cooking. Combine the mayo, vinegar, mustard, honey & salt in a bowl. Mix until well combined & place in the fridge for a few hours for the flavors to really come together

4) Now is a good time to get the rest of your additional ingredients prepared

5) Once your potatoes have cooled for a few hours in the fridge add your veggies, cut up eggs, meat & dressing to the bowl. Mix well to combine. Top with reserved green onions if desired

6) Sprinkle some paprika over top

Notes:

  • Switch out the vegetables for ones you prefer, this is just what I like to put in mine

  • If you are not on AIP switch out the white balsamic vinegar for standard vinegar

  • If you are not on AIP you can use granulated sugar instead of honey

  • To make an AIP compliant paprika mix together 2 TBSP Turmeric, 2 TBSP Coriander, 2 TBSP Garlic Powder, 2 TBSP Onion Powder, ¼ tsp Smoked Salt (optional)
