Almond Flour Waffle Maker Buns

This recipe fits into the Autoimmune Paleo (AIP) Protocol under reintroduction stage 2

Equipment:

  • Waffle maker

  • Mixing bowl

  • Measuring cups & spoons

  • Whisk

  • Storage container

Ingredients:

1 cup Almond Flour

½ cup Tapioca Starch

2 Eggs

½ tsp Salt

Herbs or Seasoning, to taste

Oil, optional

Instructions:

  1. In a mixing bowl combine your flour, starch, salt & seasoning mixing well

  2. Add your eggs & mix well until the batter is smooth & lump free

  3. Preheat your waffle maker. Coat with oil if needed

  4. Evenly pour the batter into your waffle maker ensure it covers the entire surface

  5. Close your waffle maker & allow the waffles to cook for a few minutes, until they are golden brown

  6. Carefully remove them waffles from the maker & set either eat immediately or store them in the refrigerator until you’re ready to use them.

Notes:

  • My favorite way to season these is with my buttery herb & garlic seasoning blend

  • I like to cut these in half as if it were a bun. A light toasting in a toaster oven make these extra awesome

  • They do freeze nicely if you wanted to make a large batch ahead of time & pull one out as needed
