Sweet Potato Waffle Buns

This recipe fits into the Autoimmune Paleo (AIP) Protocol under reintroduction stage 2

If possible I suggest making a double batch & freezing them once completely cooled

I like to use my mini 4 inch waffle maker, but any waffle maker will work

Equipment:

  • Waffle maker

  • Measuring cups & spoons

  • Whisk

  • Bowl

Ingredients:

1 ½ cups Sweet Potato, mashed with just butter

2 eggs, whisked

¼ cup Nutritional Yeast or Parmesan cheese (for non-aip)

½ tsp Garlic Powder

½ tsp Onion Powder

½ tsp Paprika

¼ tsp Salt

Cooking spray

Instructions:

  1. Place all ingredients into a mixing bowl & mix until well combined

  2. Preheat your waffle maker & use some cooking spray if desired

  3. Add ¼ cup of batter, if you are using a small waffle maker, spreading it out in a even layer. Adjust the amount if you are using a larger waffle maker

  4. Cook the waffles for 5-6 minutes. Adjust the cooking time if you are using a larger waffle maker

  5. Once cooked carefully remove them & place them to the side until all your waffles are cooked
