Honey Glazed Ham
This recipe is AIP-ish. Ham seems to be one of those gray area foods depending on which resource you read. To be AIP compliant you will need to find one that is free from grains, refined sugar, dairy, nightshades, non-compliant spices or preservatives, if you can find yourself an uncured ham that is the best route to go.
Is my ham compliant? Maybe, maybe not, but either way this recipe is delicious.
Ingredients:
Ham
½ cup Orange Juice
¼ cup Coconut Oil
¼ cup Honey
1 TBSP Apple Cider Vinegar
2 tsp Rosemary
Water
Instructions:
1) Preheat your oven to 325F
2) Place your ham cut side down
3) Pour water around the ham
4) Score your ham in a diamond pattern 1/4” deep
5) Cover with foil & bake for 15-20 minutes per pound. You’re looking for an internal temperature of 125F. My 6.5 pound ham took just over 2 hours
6) Prepare your glaze in a small saucepan by combining the juice, oil, honey, vinegar & rosemary over medium heat. Let cook for 5 minutes until it is slightly reduced & fully incorporated
7) Remove your ham from the oven, take off the foil & pour half the glaze over top
8) Bake uncovered for 15 minutes
9) Remove your ham from the oven & pour the remaining glaze over top
10) Return the ham to the oven & broil it for 3-5 minutes
11) Allow your ham to rest for 10-15 minutes before slicing
