Root Beer Kombucha

This recipe is a second fermentation recipe.

Equipment:

  • Pot

  • Hotplate or stove

  • Whisk

  • Muslin or Cheesecloth

  • Strainer

  • Measuring cups & spoons

  • Storage container

  • Swing top bottles or a mason jar

Ingredients:

1 quart Filtered Water

3 tsp Licorice Root, dried

3 tsp Sarsaparilla Root, dried

3 tsp Star Anise

¾ tsp Dried Ginger Root

¾ tsp Whole Cloves

¾ tsp Allspice

1 cup Brown Sugar

½ tsp Vanilla Extract

Plain unflavored Kombucha

To Make the Syrup

Instructions:

  1. Combine the dried herbs & spices in a bowl mixing well to combine

  2. Add the herbs & spices to a pot with 1 quart water mixing well to combine

  3. Simmer the mixture for 20-25 minutes or until it has reduced by 1/3, whichever comes first

  4. Placing a strainer lined with muslin or cheesecloth over a large measuring cup or bowl, strain the mixture

  5. Return the liquid back to the pot, over low heat add the brown sugar mixing until fully dissolved

  6. Remove the pot from the heat & stir in the vanilla

  7. Allow the mixture to cool completely before placing it in your storage container or start the second ferment

Second Ferment

Instructions:

  1. Add 1/3 cup of syrup to a 16 oz swing top bottle or a mason jar. Using a swing top bottle will create the carbonation but a jar will work in a pinch

  2. Top off with plain unflavored kombucha

  3. Add the lid & mix well by flipping the bottle or jar a few times but not shaking aggressively

  4. Allow the kombucha to ferment on the counter for 1-3 days at room temperature

  5. Once it’s done fermenting place the kombucha in the fridge for 24 hours before opening to help calm down the fizz

  6. Store your Rootbeer kombucha in the fridge & it is best enjoyed within 3-4 days

Notes:

  • Expect the sweetness to decline over time

  • Make sure to allow the bottles to sit in the fridge for 24 hours before opening them or all your kombucha will come shooting out of your bottle

  • Store your unused Root beer syrup in the fridge

  • You could add the syrup to sparkling mineral water
