Coconut Granola
This granola recipe is very easy to customize based on your preferences & the ingredients you have on hand. I will include some substitution ideas but feel free to take this recipe & really make it your own.
I can honestly say I make it slightly different each time & it always turns out delicious.
This recipe doubles or halves really easily & tends to stay fresh for a long time when stored in an airtight container
Suggested Equipment:
Large mixing bowl
Strong spatula or wooden spoon
Measuring cups & spoons
Large baking sheet
Oven
Food processor, optional but good for crushing up the dried fruit
Ingredients:
2 cups Arrowroot stach, Tapioca starch or Cornstarch
3 cups Unsweetened Shredded Coconut
2 cups Toasted Coconut Flakes, or more shredded coconut
1 cup Nuts or Seeds
1 cup Coconut Flour, Tigernut Flour, Almond Flour or another nut flour of your choosing
2 cups Dried Fruit, crushed
1 cup Dried Raisins, Cranberries, Blueberries or another dried fruit
2 TBSP Cinnamon, see notes
1 TBSP Vanilla powder, see notes
1 tsp Salt
2 cups Maple Syrup or Honey, divided, see notes
Instructions:
Preheat your oven to 250F
In a large mixing bowl combine the starch, coconut shreds, coconut flakes, flour, nuts, seasoning, vanilla powder & salt, mixing well to combine
Fold in your dried fruit
Add 1 cups of sweetener mixing well to combine. If you are using a liquid extract stir it in now. Add more sweetener ¼ cup at a time until no flour or starch remain & the mixture starts to stick together.
Spread the mixture evenly over a large baking sheet
Bake for 15-20 minutes, remove from the oven & stir it around.
Return the granola to the oven & let it bake in 15-20 minutes increments being sure to stir well in between baking. As it’s baking start to break down any larger pieces. Bake for about an hour to hour and a half
Allow the granola to cool down on the baking sheet. It will become crisper as it cools down.
Once fully cooled place in your desired storage container
Notes & Substitutions:
Cinnamon makes a nice easy seasoning. Ginger, Cloves & Allspice can also make delicious additions.
If you don’t have vanilla powder you can use a few teaspoons of your prefered liquid extract. You can add liquid extracts when you add in the sweetener
Use any liquid sweetener of your choosing, I’ve only ever tried it with honey & syrup but I’m sure any will work. The amount needed might be different than what has been suggested
