Today’s post is going to be a little bit different than our regular format. Since I have 7 different recipes to share with you I figured it made more sense putting them all in one post & video tutorial instead of dragging them out over a month & a half.
Each of these recipes is simple to mix up & have a shelf life of up to 12 months. Most of them only call for some liquid with maybe a tablespoon or two of a fat of your choice such as butter, tallow or lard.
All of these gravy dry mixes are salt free but feel free to add salt if desired. I personally prefer to leave mine salt free whenever possible & season as I’m cooking. By omitting the salt in the mix it’s less likely that you will end up oversalting your dish.

Au Jus Mix
Brown gravy
Chicken gravy
Country gravy
Instant gravy
Universal Sauce Thickener
I realize the universal sauce thickener isn’t necessarily a gravy per say but it will help you make almost anything into a gravy so why not include it in this recipe
Let’s get right into it & first talk about the equipment you are going to need to gather to easily make each of these recipes. As usual use what you have as these are merely suggestions
Equipment:
Mixing bowl
Whisk
Measuring spoons & cups
Storage container
Canning funnel
Gravy Dry Mix Guide
Au Jus Mix
½ cup beef bouillon powder
½ T Cornstarch
4 t onion powder
4 t garlic powder
½ tsp ground black pepper
Instructions:
In bowl combine all ingredients
Mix well until combined
Storage:
Airtight container for up to 12 months
Usage:
Add 2 T to every 1 cup of water, whisk until smooth
Brown Gravy Mix
3 cups AP flour
¾ cup bouillon powder
2 t black pepper
2 t garlic powder
2 t onion powder
1 tsp paprika
Instructions:
In bowl combine all ingredients
Mix well until combined
Storage:
Airtight container for up to 12 months
Usage:
Add 2 T for every 1 cup water, broth or pan drippings, whisking continuously to avoid lumps.
Bring mixture to a boil, reduce heat & simmer for 2-3 minutes or until desired consistency is reached
Chicken Gravy Mix
2 cups AP flour
½ cup chicken bouillon powder
¼ cup corn starch
2 T onion powder
1 t garlic powder
1 t poultry seasoning
1/2 t thyme
1/2 t rosemary
1/2 t black pepper
Instructions:
In bowl combine all ingredients
Mix well until combined
Storage:
Airtight container for up to 12 months
Usage:
Melt 2 T fat in saucepan over medium heat
Add 2 T chicken gravy mix & cook for 3 minutes stirring constantly to cook off the flour
Gradually add 1 cup of water, broth or pan drippings whisking continuously until thickened
Country Gravy Mix
2 cups AP flour
1 cup dry milk powder
¼ cup cornstarch
1 T black pepper
1 T onion powder
1 t poultry seasoning
Optional: 1 T sea salt
Instructions:
In bowl combine all ingredients
Mix well until combined
Storage:
Airtight container for up to 12 months
Usage:
Melt 2 T fat of your choice in saucepan over medium heat
Add 3 T of mix & cook for 3 minutes stirring constantly
Gradually add 1 cup of water whisking continuously until thickened
You can use this as a base for various other sauces.
Add onion soup mix to make onion gravy
Optional: Whisk in 1 T Worcestershire sauce & ½ tsp browning sauce
Use as a base for alfredo sauce by adding parmesan cheese
Use milk instead of water for a creamier gravy
Instant Gravy
1 cup AP flour
½ cup beef or chicken bouillon
½ dry milk powder
2 T cornstarch
1 t onion powder
½ tsp pepper
Instructions:
In bowl combine all ingredients
Mix well until combined
Storage:
Airtight container for up to 12 months
Usage:
¼ cup mix with 1 cup cold water.
Whisk over heat until thickened
Universal Sauce Thickener
2 cups cornstarch
½ cup blending flour
½ cup powdered milk
Instructions:
In bowl combine all ingredients
Mix well until combined
Storage:
Airtight container for up to 12 months
Usage:
1 T of mix per cup of liquid for gravies & soups
Whisk over heat until thickened
Additional Notes & Substitutions for all recipes
Adjust the spices to suit your taste
For thicker gravy add more cornstarch
For thinner gravy add more liquid starting with 1 T at a time
