Homemade Shredded Hash Browns

These hash browns store easily in vacuum sealed bags or freezer bags. I suggest storing them in prepackaged portions you can easily grab when it’s time to cook!

If you wanted to preseason these hash browns do so after you grate them but before you freeze them. This way the seasoning has something to stick to.

Make as much or as little as you desire but I suggest processing at least a few pounds work to make it worth your time.

Suggested Equipment:

  • Oven

  • Freezer

  • Pairing Knife

  • Fork

  • Baking sheet

  • Parchment paper

  • Box grater or food processor

  • Vacuum sealer, optional

Ingredients:

Starchy Potatoes like Russets or Idaho work best. Using a potato that has a lower moisture content will help achieve a crispy texture when you go to cook them.

Avoid waxy potatoes like Red, Fingerling or Baby potatoes won’t give you the best texture but will still work

If nothing else an all purpose potato like White, Yukon Gold are fine options

Instructions:

  1. Scrub your potatoes clean & pierce with a fork

  2. Place potatoes in a preheated 350F oven & bake for 30-45 minutes or until your potatoes are fork tender

  3. Allow the potatoes to cool slightly then with a pairing knife carefully remove the skin as well as any bruises or undesireable parts

  4. Once the potatoes have cooled completely & they are peeled place them in the refrigerator for a few hours to overnight. The more chilled they are the easier the next step will be

  5. Using a box grater, food processor or knife process your potatoes. If you want to make shredded hash browns use your grater or processor, to make cubed hash browns use a knife or vegetable chopper

  6. Spread the potatoes on a parchment lined baking sheet in a layer about 3/4” thick. Add additional pieces of parchment if required. This is a good place to add some seasonings if desired

  7. Place the baking sheet into the freezer until your hash browns are fully frozen. I like to leave them in overnight up to few days if I can’t get back to them quickly

  8. Remove the baking sheet from the freezer once they are fully frozen. Using clean hands break the hash brown apart

  9. Store your hash browns in vaccum sealed bags or freezer bags
