Almond Extract

Let’s make some almond extract

You can make this extract using any type of alcohol as your menstruum or extraction medium but be mindful what additional flavor the alcohol might add. Vodka is a neutral tasting spirit that works well for extracts

You could omit the alcohol & use glycerin if you prefer

Equipment:

  • Measuring cup

  • Mason jar with lid

  • Parchment or Wax paper

  • Fine mesh strainer

  • Storage bottle

Ingredients:

4 oz or ½ cup Almonds, slivered & blanched

4 oz or ½ cup Alcohol

Alcohol free version:

4 oz or ½ cup Almonds, slivered & blanched

3 oz Food Grade Glycerin

1 oz Distilled Water

Instructions:

  1. Place the almonds in a mason jar

  2. Pour the menstruum over top of the almonds.

    If you are using glycerin mix the glycerin & water together by placing them in a mason jar & shaking vigorously to combine, then pour that over top of the almonds

  3. Cover the jar & place it in a dark part of your kitchen away from direct sunlight for 6-8 weeks. Come & shake the jar daily or every other day

  4. Once the extraction is finished strain out the almonds with a fine mesh strainer & place the extract in your preferred storage container
